The relationship between Nurse Chapel and Spock was one of the most important relationships in the original series.

They had an on-and-off relationship from the beginning of the show to its end. They were very close in the early years, but when Kirk took command, Spock wanted a female and didn't care what happened to Chapel. This ended their relationship and then they had a falling out. They ended up reconciling, but then Spock broke up with her again. They had another on-and-off relationship. They got back together for a while, but then things started getting complicated. The fact that they were both human and Vulcan made it hard for them to have a lasting relationship. By the time of the original series, I believe that the ship's medical staff had accepted Spock as the chief science officer and there was a lot less pressure on Spock to get romantically involved. It would be interesting if they did get back together in the new series. They are such a cool couple.

If we can see that the person is a good actor, and has a nice voice, then it's fine. But sometimes there are shows that make you want to scream, and that's what happened to me with the part of Spock. That's the one thing that I really liked, was the fact that they gave him something to do.

They never have anything to do with each other in general except for one moment when he touches her hand in the series finale. They were meant to just be friends but there is no tension in it whatsoever. It is just "Oh look they are best friends".

Kirk and Carol Marcus do their own thing away from the crew, then they get them all back together at the end. You're forgetting the series has a very Kirk-centric feel, and Kirk and Dr. McCoy both are much more central to the plot than Spock and Nurse Chapel. The ship also spends much more time on other ships, and they spend a good chunk of time together. They didn't have much to do other than get drunk together and do a lot of things. But the story never goes beyond that.

They both have their issues with each other that they work through in "This Side of Paradise" or "Is There in Truth No Beauty" as the Romulan ship attacks Kirk's son in utero and McCoy thinks it might be a good idea to have Kirk take the boy to be raised by Spock. So you admit that they have issues, but they spend lots of time together. That said, McCoy does not love Spock. At least in The Return of the Archons, Spock does not believe that McCoy feels any physical affection toward him.

It is a romantic relationship, though not romantic enough to be what "true love" means.
