So I'm going to tell you how to find out, and then give you a summary of the best source of information about the Chrome browser: its build system. We'll even write an app which lets you query it directly.

Let's go back to the original question. Why isn't there a stable release of Chrome? Let me explain it another way. Chrome is a huge project. The main page for the project says that the project is now "open-sourced under a BSD-style license". When we talk about Chrome's "current version", we usually mean the latest version of Chrome which we know about, and which is released to users on a specific day. However, Google will periodically update Chrome in-development versions called "dev channel" builds. If you want to see the changes, you have to be invited to test them, but once you are, you get the latest features and fixes. The changes aren't stable; you can never count on them being what you see in the main Chrome page. So let's try and come up with a stable release number.
You could say "Ok, Chrome's current release is 1.0, so my stable version would be 1." But that would make us both very confused because there were two versions of 1.0, one of which was just a dev version.
Here's the way Google decides what to call a stable version. At the end of every month, Google will announce its Chrome releases for the previous month. Each month contains one release from each type. A stable release is one whose name begins with "stable". Each type includes all of the changes from the previous month. Here's the list of the names of the releases.

You can remove all of Google services from your device, and they'll use the browser that you specify in the Google App settings.

There is no way to download the Google chrome app. However, if you go to Google.com/chrome it will open in a web browser (in Safari) and you can still install the app for Chrome there. You cannot save it.
