I'd like to know how to stop an app from accessing my information.

I just installed an app on my phone that I don't want to access my information, but it seems to be accessing it. I know you can change the default apps in the phone settings, but I'd like to find a way to do this programmatically.

You can't. Your phone manufacturer (eg, Samsung, HTC, Apple) control that.

Your phone's operating system (eg, Android) controls what apps can or can't access the device.
