Buy an oven that is new and odor free, and let it sit for a year or two to bake out the stink. If it doesn't work out, you'll have the benefit of owning a safe, non-stinky oven.

If none of those suggestions work, you may have to buy a new oven. There is really no reason to have an old-style stove that needs constant adjusting. With a convection oven, you don't need a convection oven at all, or even a regular oven. The convection function can be done with the top element; the bottom element does all the heating.
