I've been thinking about buying some chicken sausages.

I will second the gourmet chicken sausages. Great flavor and a little different from the standard pork or beef. When I lived in NY, I remember there being a store in the Soho district where I could get a variety of ethnic sausages. There was a german sausage, a german style wurst, a polish sausage, a swiss sausage, a bavarian sausage, a russian sausage, and one that was described as "something with a bird in it." It came with a sauce and a potato salad that was incredible. It was some type of chicken sausage, though, because I can't think of any type of chicken sausage that has bird meat in it.
Well, it's all about what you like. I personally like chicken and pork sausages, but I also like turkey. One of my favorite sandwiches is turkey with provolone cheese on a Kaiser bun. It is very flavorful, and it's a sandwich that can be found at most delis.
If you're going to spend the money, you might as well get the best possible sausages you can afford. In my opinion, I would get both a turkey and a chicken sausage, and have them on the same sandwich. I like to have a hot dog on the side and a couple of baked potatoes. That way, you get the full experience.
