Hi, My family and I are planning a trip to China in November and my wife wants to use Astrill VPN to access the internet.

This may be a very stupid question, but can someone explain the concept behind these companies and their services? If the information you're sending is not encrypted, how would they be able to tell whether it's your information or not? If it's encrypted how do they decrypt it to see if it's your information? Also, it appears that they have servers located all over the world, so does that mean they have the capability of reading whatever information you send to them?
