Why do they have different addresses? And please mention any extra addresses if there are more than the already listed ones. Note that I have a router and thus have 4 IPs. Thus, I tried all the addresses and found the same result.
To answer the question, you can only tell it the domain because that is what your application is connecting to. If it was connecting to "abcdefghijkl" where the first four are .com, the last six are "local", would we know anything else?
So, it's like that with ANY domain. That is DNS. Not just Google.
As for why google.com has different addresses, it's simple. They can and you have to remember you have access to Google.com to find out.
What happens on the back-end is different based on who you are. If you're not in the Google.com data centers, you get the servers running at another country, say. Ireland.
If you are in the Google.com data centers, you don't need that as they have their own servers, which handle things locally. Or, since they control many of the networks connected to their local "servers". You get them here too (the server could still be in Ireland and routed. To somewhere else). The point of this is DNS is really important. Without the DNS, we couldn't do this. Even the back-end doesn't really matter, you just access whatever you want. Without the DNS, I don't think we could even have any sort of internet back-end with thousands of machines that handle all of the requests. That is just how it is.
