Cheung is one of the best TCM practitioners that I've known. In this book, he offers an entirely new perspective about TCM by emphasizing the need to study and know what causes diseases and then find the ways to prevent them. Cheung explains the reason why TCM works by offering remedies that help to restore energy flow to the body and cure the problems of the individual. He is a strong advocate of using Western Science to better understand TCM.
Dr. Cheung writes about different medicines used in TCM, but he is not a botanist nor a phytochemist. This makes me wonder if we can learn anything from TCM. The answer is yes! We can! Cheung goes through the details of the process of identifying therapeutic effect and chemical composition of Chinese medicinal herbs. For example, how to choose the right plant for a remedy, when to harvest it, how to extract the active ingredient and how to use it. His book tells you how to identify the active component, the effect it has on the disease and the mechanism of action.
The last part of the book offers the process of growing medicinal herbs in China. There are a lot of information in this part of the book as well.
A Short History Of Traditional Chinese Medicine: Written by John S. Major, PhD, this book is an introduction to the history of Traditional Chinese Medicine (TCM). Although I am not familiar with the scientific facts of this book, I highly recommend it to anyone who is interested in learning more about TCM. Major gives an interesting overview of the history of TCM in ancient China and introduces us to the different types of TCM practitioners.

The truth is: there is only one way to describe the black of the coffee from China, and this is by saying Sinensis. The first step to achieve the perfect black is to select the right quality of coffee beans. Only the best beans will give the high quality results needed for producing a smooth, light cup of delicious black.
What qualities should you look for? Freshness and high moisture content are essential. They'll produce more flavorful and smoother cups. If you see the coffee beans are too wet, you can put them in the oven at 200 degrees for 15 minutes to help dry them out.
For better cup of the black, choose organic or certified fair trade beans, as this way you are supporting the growers and their community. You need to buy beans with low acidity levels, as too much acidity in the coffee affects the taste. The best way to do this is by pre-soaking them. This gives the beans a smoother grind and an even release of flavors. And yes, they need to be soaked for at least 10 hours.
To get the best black, choose beans with a high amount of nitrogen and high levels of chlorophyll. Make sure the beans are of medium sized. This is due to the size of your grinder. You can adjust it to obtain the size needed to grind the beans well.
For better result, do a coffee tasting on different coffee beans, before purchasing the black. Try it with different coffees, from different countries and regions, and see if you can find a match!
