What is meant by data extraction?
I am attempting to use an open source system to collect data on a certain aspect of a research project.
However, when I go into the extraction function, I only have the option for a "Table", which doesn't seem to be relevant here. How do I go about extracting this kind of data from a spreadsheet? (Also, the site I am using does not offer any advanced options, so I am unable to change it.)
You can always get the exact formula from the table by exporting it (in other words, getting the exact formula written in a new cell in Excel, without formulas) and you can re-import the data with the exact formula from the table. Alternatively, if you don't need the exact formula, but just want to pull the data from the table, you can also try the copy-to-cells. This is the easiest way and works in many cases.

Is data extraction legal?
I have been searching for answer to this question for a few days now, but can't seem to find a conclusive answer. It's a bit broad, so I am not sure what exactly I am looking for.

The United States Code (Title 15) contains some of them, though the extent of the law varies by state. If you're starting from a US perspective, I'd start with this. For a non-US perspective, it would probably be a good idea to start with the OECD's Data Protection Regulation.
Now we can look at the law and see if it explicitly prohibits or allows data extraction. I did a quick search and didn't find anything that says extract is legal or illegal. So that suggests there's no clear answer. Now the next step is to look at whether data extraction is illegal in any way. That would include (a) direct violation of data extraction laws, or (b) indirect violation because of an improper use of the data. If we assume that data extraction is legal, it would also include (c) whether the data extraction is illegal.
If we look at the US code, it mentions that data extraction is allowed for the following purposes: for research or statistical purposes;. For news reporting;. In judicial or administrative proceedings;. For legislative or other government purposes;. To protect against unauthorized disclosure of personal information;. To satisfy reporting requirements of federal, state, or local governments; or. To comply with legal process. Now, that doesn't include data mining (and that's what you asked about). The section you cited appears to only mention illegal activity when discussing unauthorized access. I don't see anything that states that data mining is illegal, but I don't have time to fully search the text.
I'm assuming that all of these reasons are allowed, though there may be some that aren't mentioned here. And that's why I said that it's a bit broad. The more things you add to the list, the more likely it is that there's an inconsistency in the law.
So how do we figure out which parts of the law are illegal? That's harder than it sounds.

At that point, you have to look at your Excel sheet and try to find those data and then you can create graphs to get an effective view of the data.
Let's see an example with an online store to understand it better. A customer buys a product (say a dress) and gives it's name. Let's say, the name is My Dresses. In this example, we can give this data as M with the value 10 and the code D with the value 40.
Once the user enters the data in an Excel sheet, this data is saved in the specific column, if you check properly. If you look into the cell, the name is automatically formatted in bold, which means it's a primary key or it's a fixed value and hence the ID column is automatically filled up with the unique keys with the data in this format:
Let's consider this data and the users wants to sell this product so how they can see it in an effective manner? For this, they have to follow this step and extract that data first. Steps to extract a record: Step 1: 1) Open the file -> choose the data and click on the button, select it and press extract. 2) This button might be located at the top right side of the cell. If not visible, move to the right and open the menu. It opens up three options: Data, Charts, Grids.
3) It opens up two options named Extract and Extract All.
