What's the difference between salami and sausage?
It's not easy to find a good answer for this question.
There are quite a few recipes that call for salami.e. Some call for "salame", which is apparently Italian for "sausage". I've even seen a recipe for "salami" that called for ground pork (not just meat).
The first time I saw this question asked on the Internet was at least 10 years ago. It was a question from someone whose English was clearly not very good, so it's quite possible that it's been around a bit longer.
The consensus I've heard so far is that in Italy they call "salami" anything that's sausage-shaped and made with pork. When I've looked at how it's made, I've seen sausage meat (which is the usual casing of beef or pork), ground beef, ground pork and ground veal. Sometimes there's some sort of seasonings mixed in as well.
When the question was asked on the English site, somebody had already given the answer, which is that "Italian salami is made from salame or salame-style meat, while American salami is made from beef." Now, I'd like to know if this is a correct answer. It seems that "salami" has come to refer to any type of sausage, but I'm wondering if it's because the real thing (in Italy) is really called "salame" and it just became a synonym for "sausage"? It seems that this is correct. From the Wikipedia article: Salami is a type of cured sausage, typically made from raw minced pork, beef, veal, or a mixture of meat and fish. In Italy, it is defined by the European Union (EU) and its official Italian language version, the Manual of Hygiene in Foodstuffs, as a "prepared and cured meat product obtained by finely mincing meat of pork or of pork and other slaughtering by-products, of beef, veal, pork and beef, salt, nitrites, and spices". I think I remember seeing a list of names for different types of salami on the Internet, and they all listed "salame" as being one of them.
