If you didn't give explicit permission to these apps when they asked to, then they probably have.
And if they do then your Google account may be compromised.
For that reason alone I strongly advise not to ever use any Google app outside of the Chrome browser. This means Google Maps, YouTube (which is what people would assume you meant), and anything else that might be used as a replacement for Google products.
The best idea is to not use Google at all, unless it's a desktop client like Google Documents. And if you can live without Gmail then do so (although the lack of 2-factor authentication, plus an easy phishing campaign, makes Gmail very weak).

If you'd like to view which applications are connected to your account on your Android device, you'll first need to download the Google Account Manager app. You can download this from the Google Play Store for free.
From the Google Account Manager app, tap Accounts on the left side of the screen. Here you can manage your Google accounts, including your Google Play Music, Gmail and YouTube accounts.
To open your settings on your device, click on the Settings icon on the top-left corner of the screen. Scroll down to the bottom and click on the Google Accounts option. The first time you go through the steps to connect your Google Account, you'll be prompted to choose a picture to represent you. For the rest of the time, you won't be asked to choose a picture.
